Meatless Monday: Mother-in-Law’s Tongue Pasta

Fennel, Italian peppers, San Marzano tomatoes, garlic and green onions all grilled together with olive oil, sea salt, cracked pepper, Italian parsley, lemon and fresh oregano.  Served over mother-in-law’s tongue pasta and topped with shaved Grana Padano cheese.

    that looks great. any idea why it’s called mother in law pasta? before googling the term, I was thinking that your mother in law had made the pasta, and I was amazingly impressed with her skill at mixing colors within her homemade pasta! :)

      You’re not far off- they’re called mother-in-law’s tongues (Lingua di Suocera) because they are long, colorful and sharp around the edges. ;-)
