		<description><![CDATA[Sure, chicken or a firm, white fish like cod or haddock would work  great.  Leave out the chilies &amp; increase the coconut milk a little (just  reduce it longer if too thin) and the kiddos ought to love it. 

Jam Sanitchat recommends Maesri Thai red curry (about $3 in the store, a  bit more from Amazon)

I really, REALLY miss Thai. We have one restaurant here but we won&#039;t eat there.
