Hi Ren, Your post on Nourished Kitchen brought back memories of fresh masa that my parents learned to grow and make from Mexican Indians. What is your source for fresh masa? Do you soak the hard corn yourself or buy it fresh ground? Is it organic or from a trusted (non-gmo) source?

We have several /Tortillerias/ in Austin, so its easy to get freshly made tortillas or masa dough to take home. I have made my own masa harina from dried hominy & lime, but this particular batch came from a bag of whole-grain, organic corn flour.
