Green garlic is harvested before it matures and separates into cloves; it is similar to green onion in size and shape, and tastes something like a milder cross between garlic and onion.  Peeled elephant garlic cloves and trimmed (root end &amp; tough part of the tops) green onions are a pretty good substitute for green garlic.

If I&#039;m using regular garlic and just add some green onion, would you roast the green onion also?  When you say garlic trimmed, does that mean you&#039;re still leaving it in cloves and just taking the outer part off?  Thanks so much.]]></description>
