Crevettes à la Créole

Generations of of French, African and Spanish heritage come together in this classic Louisiana preparation featuring fresh Gulf shrimp, homegrown tomatoes, onions, celery and green bell peppers.

I like to use stock-simmered, germinated brown rice instead of the traditional boiled white rice, lots of fresh oregano and thyme, green onions and celery.

My version is thicker than gumbo (a natural reduction vs. roux) and spicier than  jambalaya (fresh cayenne and Tabasco peppers), shrimp Creole is one of those deceptively simple dishes that are lately difficult to find well-made outside of the local parishes..

A thick, rich soup of sprouted brown rice, corn, curry, red chiles and coconut cream, topped with toasted cashews..

Sprouted Brown Rice Curry

Makes about 4 servings

2 cups germinated brown rice (GBR)
1 1/2 cups dent corn, soaked
2 cups vegetable stock
3 cups filtered water
1 small white onion, diced
2-3 fresh red chiles, thinly sliced
1 tablespoon safflower threads, soaked
2 tablespoons chopped fresh cilantro
2 cloves garlic, minced
1 tablespoon ghee
1/3 cup coconut cream
1 teaspoon coriander seeds
1/2 teaspoon cumin seeds
1/4 teaspoon black mustard seeds
1/2 black pepper
1 1/2 teaspoons turmeric
1/2 teaspoon fenugreek
2 teaspoons curry leaves
raw cashews
raw coconut flakes

To germinate rice, place in a bowl and cover with 100 degree water.  Cover loosely and allow to stand on the counter, changing water 2-3 times a day until germinated, 18-48 hours.

Toast coriander and cumin seeds in a dry skillet until fragrant.  Transfer to a spice grinder and process along with mustard seeds, peppercorns, turmeric and fenugreek.

Sauté chiles, onions and garlic in ghee until softened.

Combine vegetable stock and water and bring to a boil.  Stir in corn and simmer 20 minutes.  Stir in rice, cover and simmer 20 minutes.  Add spices, curry leaves, onions, garlic, chiles, safflower threads and coconut cream and simmer until thickened, about 15 minutes.  Adjust flavor with salt if necessary.

Ladle into bowls and garnish with cilantro, toasted cashews and coconut flakes.

Roasted Asparagus and Maitake Soup

Lightly coat fresh asparagus tips and Maitake mushrooms (Hen of the Woods) with melted pastured butter. Season with freshly-cracked pepper (no salt) and roast in a 400 degree oven until the asparagus begins to caramelize and the mushrooms begin to crisp on the edges.  Set aside.

Meanwhile, cook organic short-grain brown rice in homemade chicken stock with the melted butter and juices from the roasted vegetables until just tender, about 50 minutes.

Reduce heat to medium low and add crushed garlic, minced fresh ginger, thinly sliced green onions and coarsely chopped maitake.  Stir to combine.

Carefully pour one or more duck eggs from a dish directly into the simmering soup.  Cover and cook until the eggs are set, about 7 minutes more-or-less.

Remove from heat a stir in a spoonful of miso.

Garnish with a little red pepper and some pea shoots or micro-greens and serve immediately.

Cajun spices, dried red beans, red velvet okra, celery, onions, peppers, garlic, tomatoes and kale with soaked brown rice and Louisiana hot sauce..

Soak dried red beans and brown rice (separately) overnight in cool filtered water.

Rinse, drain and cook beans in filtered water with bits of celery, onions, carrots, bay leaf and fresh thyme.

Rinse, drain and cook rice in filtered water with butter, sea salt, smoked black pepper and dried minced jalapeños (optional).

Heat clarified butter in a heavy skillet over medium-high heat.  Add celery and onions and cook until slightly brown.

Add okra, peppers and kale and sauté 2 minutes.

Add tomatoes, garlic and beans.  Season with dried oregano, cayenne, caraway, dill, turmeric and marjoram.

Reduce heat and simmer 15 minutes, stirring often.

Serve beans and vegetables over rice, dress with hot sauce if desired.
